Cooking adventure: B&E Toast cups

Ok so I'm not sure why I decided to get into these cooking extravaganza's at 8:30 at night. I get home from work completely famished since I think all I had time for yesterday was a chai tea, so you would think I would grab the closest Tupperware container of leftovers and just eat that...you would think.. but my mind which has been perusing pinterest all day has other plans

  Well at first I thought I had everything needed for this recipe, pinned from marthastewart living I believe. Eggs, bacon, bread...once again i thought... but I was missing a KEY thing..a muffin pan. Yep, I didn't have a muffin pan, and my bacon was moldy so I thought about abandoning my cooking adventure. Then I realized that I had to go to the store for another cooking adventure I plan on having tonight (making Christmas eve apps).  So off to the store I went.

 Now I also had half a tube off Pillsbury biscuits left, that I needed to use up so I knew this would be perfect.  I flattened out the biscuit dough a little bit then molded them into the cup. I also wanted to try one with the bread, which I thought was a clever idea. You take a piece of bread, I used whole wheat, flatten it and then use a cookie cutter to get a circle to cut in half and then mold 2 halves together in the muffin cup. Now another instrument I didn't have was a cookie cutter, so I used a cap from my can to kind of cut the circle shape I wanted, and it actually worked pretty well.

Now the only issue I had, was I think because I used extra large egg. so they  kind of spilled over the cup.

So the finished result--- the  bread once actually came out the best, the other ones overflowed a little bit, but the egg was cooked, so i could still easily take them out of the cup and they stayed in tack and looked like an adorable little breakfast in a muffin

They would be perfect for brunch! and pretty good on the go to.
